The foundation of every Vietnamese coffee
How to master the classic Phin filter brew – the base for Cà Phê Sữa Đá, Cà Phê Đen and every other variation.
Grind the beans medium-fine – not too fine, or the Phin filter will run too slowly or clog.
Add 2-3 tbsp coffee grounds to the Phin filter and spread evenly before gently placing the press plate on top.
Press the plate down gently – the grounds should be lightly compacted but still let water through.
First pour about 30 ml of hot water to let the grounds bloom. Wait 20-30 seconds, then top up with the rest of the water.
Let the coffee drip for 4-5 minutes. It's now ready for Cà Phê Đen, Cà Phê Sữa Đá, or as the base for Cà Phê Trứng.
Tip
The finer the grind, the slower the coffee drips and the stronger it becomes. Start from medium-fine and work your way towards your favourite grind size.
